Lined Baking Sheet – This simple soup is made by roasting and then blending the veggie to silky soup perfection and that all begins with a baking sheet! Grab a large sheet and line it with parchment for easier cleanup and help prevent burning.

Blender – A countertop blender is the perfect tool for soup making and don’t worry if your blender is small you can simply work in batches to blend this soup.

Zucchini: If you have a green thumb you might already have some zucchini in your garden, but not everyone is so lucky! If you don’t have any in your garden you’ll have to grab the zucchini from the store and there are a few important things to look out for.

Choose zucchini that is firm and weighty when picked up. The skin should be bright and free of cuts, bruises, and soft spots.

Onion: A fresh yellow or white onion has just the right taste and texture for this soup. Plus, hiding between the layers, onions actually have lots of nutrients. Like potassium and vitamin B6 which can help promote healthy brain cell production and good digestion.

Garlic: Fresh cloves of garlic are a great choice for this Zucchini Soup recipe because they will be slow-roasted which brings out all the earthy, sweet, and savory flavors.

Garlic is a super healthy ingredient. It adds tons of delicious benefits that go far beyond its irresistible flavor, like manganese and fiber, but possibly the best side effect of garlic is that it is antimicrobial. That means it helps your body fight off bacteria, germs, and even some viruses.

Olive Oil: Olive oil is loaded with healthy antioxidants and mild olive flavor making it a great cooking oil for this dish. If you prefer another cold-pressed oil, feel free to make the swap.

Sea Salt and Pepper: A soup this incredible only needs simple seasonings, like salt and pepper!

Vegetables Stock: Stock turns this roasted veggie medley into a soup! You can use full or the more heart-healthy choice of low-sodium vegetable stock in this Zucchini Soup recipe. Just be sure to warm the vegetable stock to a boil before blending. This helps ensure that everything blends smoothly and deliciously.

Nut Milk: To bring a bit of creaminess to the soup, nut milk is the perfect choice. Delicious non-dairy milks like almond or macadamia milk, have all the creaminess and flavor of dairy milk but with fewer calories and cholesterol than dairy milk.

If you have a nut allergy don’t fret, just trade this ingredient for another creamy non-dairy milk like coconut or oat milk.

  • Serve this soup while it is warm and enjoy it with your favorite garnishes like crispy crayfish, creamy, cheese, or sour cream. Or you can keep it vegan with a simple drizzle of olive oil and some roasted nuts as a garnish.
  • To store, allow the soup to cool completely and then cover or pour it into an airtight container. Store in the fridge for up to 5 days.
  • To reheat, microwave the leftovers for up to 2 minutes or on the stovetop over low heat for about 5 minutes.

    Ingredients:

    • 2 zucchinis cut into big chunks
    • 1 onion cut in quarters
    • 6 cloves of garlic
    • 1 tbsp olive oil
    • 1 tsp sea salt
    • 1 tsp pepper

    Instructions
     

    • Step One - Combine everything on the lined sheet pan
    • Step Two - Mix until well-coated.
    • Step Three - Bake the veggies.
    • Step Four - In the blender, blend the veggies with the hot stock and nut milk until very smooth.
    • Step Five - Serve the luscious soup topped with crayfish and/or cream cheese and enjoy!
