Agave - use honey or maple syrup instead as desired
Instructions
Step 1. Cut the lemon and ginger into large pieces. Place the lemon and ginger into a small saucepan with 4 cups water. Bring to a boil. Reduce the heat to low and simmer for 10 minutes uncovered. Remove from the heat and let sit for 5 minutes.
Step 2. Pour the thee into a large teapot, and strain the ginger water using a strainer (optional). Use a reusable stainless steel tea infuser or a fine mesh strainer for loose tea leaves and place the cooked ginger and lemon in it and then into the teapot (optional).
Step 3 For serving: Add a teaspoon of agave syrup or honey to your teacup. Enjoy warm or chilled. Transfer the remaining ginger tea to large ice cube trays. Freeze. Good for up to 3 months.
