Mini Granola Cups

Course Appetizer, Breakfast

Ingredients
  

  • 1 ripe banana
  • 1 cup rolled oats
  • 1 tbsp ground flax seeds
  • 1 tbsp chia seeds
  • ¼ cup agave syrup
  • 1 tbsp coconut oil melted
  • 1 tsp cinnamon
  • ¼ tsp salt

Toppings

  • Yogurt and prunes
  • Yogurt and cherries
  • Goat cheese date, walnut and agave syrup
  • Almond butter banana and cacao nibs
  • Sugar-free chocolate spread and walnuts

Instructions
 

  • Mash the banana and mix all the ingredients in a bowl until well combined.
  • Transfer the batter into cupcake liners and form your little cups.
  • Bake at 180°C for 25-30 mins.
  • Let them cool down completely before removing them from the cupcake liners.
  • Finally add your favorite toppings!
