Pre-heat the oven to 400F/ 200C.
In a large mixing bowl combine the ground beef with all the spices and mix well to incorporate.
Grease a muffin tin with olive oil and sprinkle the greased cups with 2 tbsp grated parmesan.
Grab an ice scoop and scoop out a ball of the ground beef mixture into the muffin cups. Press the meat down and create a little hole in the middle.
Add a tablespoon of the grated zucchini and a teaspoon of grated mozzarella on top of the meat, scoop out another tablespoon worth of the ground beef mixture and press it gently on top, press down the sides and make sure the meat cups are completely covered.
Repeat this process for all six muffin tin cups. Sprinkle the top with some grated parmesan and bake for 30 minutes.
Let the meat cups cool before handling them.
