    Keto Ground Beef Casserole Recipe

    • 5 low carb tortillas
    • Ground beef filling:
    • 1 onion diced
    • 1 sweet paprika diced
    • 1 kg of ground beef
    • 1 tsp salt
    • 1 tsp onion powder
    • 1 tsp dried parsley
    • ½ tsp Curcuma
    • 1 tsp paprika
    • 1 tsp Italian spices
    • 2 cup fresh spinach

    Cheese mix:

    • 6 eggs
    • 150 gr. Cottage cheese
    • 1 cup grated mozzarella cheese + ½ for garnish
    • 1 tsp sea salt
    • 1 tsp pepper

    Instructions
     

    Directions:

    • Layer the tortillas on top of each other, roll them up, and cut them into ½ inch/1 cm slices.
    • Place the tortilla slices in a baking dish and set aside.
    • In a large mixing bowl, mix the ground beef, the diced onion, the sweet paprika, and the spices.
    • Heat up a skillet with some olive oil and cook the ground beef, stirring occasionally
    • In a separate bowl mix the eggs, cottage cheese, mozzarella cheese, salt, and pepper.
    • Grab the baking dish with the low-carb tortillas and pour the fully cooked ground beef evenly over the tortillas. With a serving tong mix the ground beef with the tortillas.
    • Pour the cheese mix evenly over the tortillas and beef mix. Bake at 190°C/360°F for 30 minutes or until the cheese turns golden.
