Heat up a medium nonstick skillet, with some olive oil, whisk the eggs, pour the eggs in the hot skillet, and turn the heat to low. Place the slices of bread on top of the eggs, let them soak up a bit of the whisked eggs, then turn the slices around. Sprinkle some parsley over the bread slices, then flip the omelet with the bread slices around. Layer the cheddar cheese, the chicken deli, the tomato, and the spinach leaves over the bread slices. Fold the overlapping egg then carefully flip one slice over the other.
