Grate the carrots and place them in a mixing bowl, add the eggs, salt, and pepper. Mix to combine.
Heat a nonstick pan with some olive oil, use a burger patty mold to form nice little circles, fill the burger patty mold with 2 tablespoons of the carrot mixture, and gently press down, carefully remove the molds. If you don’t have burger patty molds, just scoop 2 tablespoons per fritter directly into the skillet and try to form a circle shape. Don’t touch the fritters until it’s time to flip them! Gently fry the fritter for about 6 minutes per side on low to medium heat.
