Lavash Rolls with Cottage Cheese Recipe

    Ingredients:

    • Lavash bread
    • 2 eggs boiled and grated
    • 200 gr. Cottage cheese
    • 1 medium tomato diced finely
    • A handful of parsley
    • ½ cup grated mozzarella
    • 1 tbsp grated parmesan cheese
    • ½ tsp sea salt

    Instructions
     

    Directions:

    • Cook the eggs for 8 to 10 minutes, and place them in an ice bath to cool.
    • In a medium-sized mixing bowl, add the cottage cheese and crush it with a fork to remove most of the lumps. Add in the diced tomato, parsley, mozzarella, grated parmesan, salt and pepper. Lastly, grate the eggs and mix to combine.
    • Lay one lavash bread on a cutting board and add the filling to one side of the lavash, fold in the sides, and roll it up.
    • Place the lavash rolls in a preheated skillet, and let them get golden brown on both sides for just a couple minutes per side.
    • Cut the lavash rolls in the middle and enjoy.
