Cook the eggs for 8 to 10 minutes, and place them in an ice bath to cool.
In a medium-sized mixing bowl, add the cottage cheese and crush it with a fork to remove most of the lumps. Add in the diced tomato, parsley, mozzarella, grated parmesan, salt and pepper. Lastly, grate the eggs and mix to combine.
Lay one lavash bread on a cutting board and add the filling to one side of the lavash, fold in the sides, and roll it up.
Place the lavash rolls in a preheated skillet, and let them get golden brown on both sides for just a couple minutes per side.
