In a small mixing bowl, smash the broccoli until it's like a puree. Add in the oat fiber, grated parmesan cheese, salt, Italian seasoning, lemon juice, and one egg. Mix until well combined.
Use your hands to form the round-shaped fritters. This should make 6 medium-sized fritters. Spray the bottom of the air fryer with some olive oil or use a piece of parchment paper to prevent them from sticking to the bottom. Place in the air fryer basket. Air fry for 12 to 15 minutes at 325°F/160°C.
While the fritters are cooking, make the sauce. Mix all the ingredients together in a small bowl and set aside.
