Air Fryer Broccoli Fritters Recipe

    Ingredients:

      For the Fritters:

      • 3 cups cooked broccoli
      • 2 tbsp oat fiber
      • 2 tbsp grated parmesan cheese
      • ½ tsp Himalayan sea salt
      • 1 tsp Italian spices
      • Juice of half a lemon
      • 1 egg

      For the Sauce:

      • 2 tbsp low-fat mayonnaise
      • 1 tbsp crushed fresh garlic
      • 1 tsp Italian spices
      • 1 tbsp grated parmesan cheese
      • 1 tbsp lemon juice

      Instructions
       

      Directions:

      • In a small mixing bowl, smash the broccoli until it's like a puree. Add in the oat fiber, grated parmesan cheese, salt, Italian seasoning, lemon juice, and one egg. Mix until well combined.
      • Use your hands to form the round-shaped fritters. This should make 6 medium-sized fritters. Spray the bottom of the air fryer with some olive oil or use a piece of parchment paper to prevent them from sticking to the bottom. Place in the air fryer basket. Air fry for 12 to 15 minutes at 325°F/160°C.
      • While the fritters are cooking, make the sauce. Mix all the ingredients together in a small bowl and set aside.
      • Let the fritters cool a bit before plating them.
