Cut the chicken breasts horizontally, then vertically this ensures that the chicken cooks equally.
Place the chicken breast in a large mixing bowl, add all the spices, the olive oil, and the Greek yogurt. Mix to combine, you want all the chicken breast well coated in the marinade.
Cut 4 pieces of parchment paper, start folding inwards, creating a fan-like shape, then turn the ends to create the boats, you can also use a oven-safe rope.
Open the boats and the onion, paprika, parsley and lastly place the chicken breast filet on top. Assemble all 4 boats in this order.
Bake the chicken breast boats for 30 minutes, remove from the oven, and sprinkle the mozzarella and parmesan cheeses over the boats and bake for another 15 to 20 minutes.
Let the boats cool for a couple of minutes.
