High-Protein Healthy Pulled Chicken Salad Recipe

    Ingredients:

    • 2 chicken thighs
    • 1- liter boiling water
    • 1 tablespoon olive oil
    • 1 onion cut in quarters
    • 4 cloves of garlic
    • 1 bay leaf
    • 1 tsp salt
    • 1 tsp onion powder
    • 1 tsp paprika powder
    • Iceberg lettuce cut into bite-size pieces
    • 1 cucumber diced into small pieces
    • 1 celery stalk cut in small pieces
    • 1 shredded carrot
    • Cherry tomatoes cut in half
    • 1 tbsp capers
    • 5 mini mozzarella cheese balls
    • The pulled chicken
    • Feta cheese
    • Low salad dressing

    Instructions
     

    • Step One - Boil the chicken in water with olive oil, onion, garlic, bay leaf, salt, onion powder, and paprika. Boil for 30 minutes or until tender.
    • Step Two - let it cool then pull the meat off the bones using forks.
    • Step Three - In a salad bowl toss the iceberg lettuce, cucumber, celery, carrot, cherry tomatoes, capers, mozzarella, feta, low-fat salad dressing, and the pulled chicken.
    • Step Four - Preheat the oven.
    • Step Five - Cut a low-carb tortilla into 8 portions.
    • Step Six - Place the tortilla on a baking sheet, sprinkle it with olive oil and grated parmesan cheese. Give it a good mix and bake for 5 minutes.

    Step Seven - Assemble and enjoy!
