Step One - Boil the chicken in water with olive oil, onion, garlic, bay leaf, salt, onion powder, and paprika. Boil for 30 minutes or until tender.
Step Two - let it cool then pull the meat off the bones using forks.
Step Three - In a salad bowl toss the iceberg lettuce, cucumber, celery, carrot, cherry tomatoes, capers, mozzarella, feta, low-fat salad dressing, and the pulled chicken.
Step Four - Preheat the oven.
Step Five - Cut a low-carb tortilla into 8 portions.
Step Six - Place the tortilla on a baking sheet, sprinkle it with olive oil and grated parmesan cheese. Give it a good mix and bake for 5 minutes.
