Step One - Cut the paprika pepper in half, deseed, and wash them.
Step Two - Cut the tomatoes into thin slices.
Step Three - Cut the mozzarella into thin slices.
Step Four - Place the paprika peppers in a baking dish and start filling the peppers with mozzarella, tomatoes, and basil leaves. Repeat this until the peppers are completely full.
Step Five - Drizzle the olive oil, salt and pepper, and pine nuts over the filled paprikas and bake in a preheated oven until the cheese is golden brown.
