Zucchini Spinach Pancakes Recipe

    Ingredients:

    • 1.5 zucchini grated and moist squeezed out
    • 2 eggs
    • 1 tbsp oat fiber
    • 30 grams pecorino grated
    • 1 cup fresh spinach

    The sauce

    • ½ Greek yogurt
    • Juice of ½ lemon
    • ½ tsp oregano
    • A small handful of Fresh coriander cut into small pieces
    • A small handful of fresh mint cut into small pieces

    Instructions
     

    Instructions

    • Step One - Mix all the pancake ingredients.
    • Step Two - Preheat your skillet with a little olive oil and use the patty mold to form the pancakes.
    • Step Three - Pan-fry the delicious spinach pancakes.
    • Step Four - While they cook, mix together all the sauce ingredients.
    • Step Five - Plate the Spinach Pancakes with a generous scoop of sauce and a sprinkle of coriander and enjoy!
