Zucchini Spinach Pancakes Recipe

The sauce

Greek yogurt
Juice of ½ lemon

oregano
A small handful of Fresh coriander cut into small pieces
A small handful of fresh mint cut into small pieces

Instructions
Step One - Mix all the pancake ingredients.
Step Two - Preheat your skillet with a little olive oil and use the patty mold to form the pancakes.
Step Three - Pan-fry the delicious spinach pancakes.
Step Four - While they cook, mix together all the sauce ingredients.
Step Five - Plate the Spinach Pancakes with a generous scoop of sauce and a sprinkle of coriander and enjoy!
