Cut horizontally and then vertically into the avocado and remove the flesh and set aside the shell. Place the avocado flesh in a small mixing bowl and add the lemon juice, salt, and pepper then fill the avocado halves halfway with the avocado mixture.
In a mixing bowl mix the rest of the ingredients and fill the shell of the avocado boast with the mixture.
Top with some spring onions and enjoy your Pure Plate.
