Avocado Shrimp Boats Recipe

    Ingredients

    • 1 ripe avocado cut into small squares
    • Juice of 1 lemon
    • ½ tsp salt and pepper
    • Shrimp mixture:

    Shrimp mixture:

    • 100 grams of shrimp cooked
    • 1 small onion
    • 1 tbsp tomato puree
    • ½ cup low-fat yogurt
    • 1 tsp salt
    • 1 tsp pepper
    • 1 apple grated

    Instructions
     

    • Cut horizontally and then vertically into the avocado and remove the flesh and set aside the shell. Place the avocado flesh in a small mixing bowl and add the lemon juice, salt, and pepper then fill the avocado halves halfway with the avocado mixture.
    • In a mixing bowl mix the rest of the ingredients and fill the shell of the avocado boast with the mixture.
    • Top with some spring onions and enjoy your Pure Plate.
