For the Salad:

fresh spinach cut in bite-size pieces

cucumber cut into small squares

handful of green olives
For the Dressing

olive oil
Juice of ½ lemon
Handful of fresh parsley cut into small pieces

Instructions
Mix all the ingredients in a large salad bowl and drizzle the dressing over the salad.
