    • 4 eggs at room temperature
    • 100 gr/ 4 oz cream cheese
    • 1 tbsp erythritol

    Directions

    • In a blender, combine all 3 ingredients and blend to combine well.
    • Place a large pan over medium heat and add butter. Pour the batter into pancake shapes and cook them until golden brown on both sides, this should take about 3 minutes on each side.
    • Add a bit of oil or butter each time before you pour in the batter just to prevent them from sticking to your pan.
