Cook the beef on a medium heat until almost done. Add in the garlic, onion, dried parsley, and red bell pepper, and then sauté this until the red bell pepper is soft.
Add in the cottage cheese, the almond milk, the shredded cheddar cheese, and the enchilada seasoning.
Stir until well incorporated.
Remove from the heat and assemble the burritos by adding some of the beef mixture to a burrito, folding in the sides, and rolling it up, keep pressing in the sides until you’re done.
Place the burritos in the air fryer at 200C/400F for 8 to 10 minutes.
Remove, let it cool, cut it up, and enjoy the crispy on the outside and juicy burrito on the inside.
