The Perfect Low-Carb Sandwich

Ingredients
  

Ingredients:

  • 1 tbsp olive oil
  • 1 tbsp balsamic glaze
  • 10 cherry tomatoes cut in half
  • A small handful of fresh spinach
  • 2 Slices low-carb bread See my perfect keto bread recipe here
  • Sliced mozzarella
  • Arugula
  • Chicken deli meat

Instructions
 

  • In a large bowl mix the olive oil. Balsamic glaze, cherry tomatoes, and spinach. Give this a good mix to combine and set it aside.
  • Toast the low-carb bread and then top it with the tomato and balsamic mixture.
  • Add slices of mozzarella and top it with arugula.
  • Add the deli-sliced chicken and then top with a second slice of low-carb bread.
