Ingredients:

  • 1 zucchini sliced in rings
  • 1 red bell pepper sliced
  • 1 leeks sliced
  • 1 red onion sliced
  • 1 tbsp olive oil
  • 1 tsp basil
  • 1 tsp sea salt
  • 1 tsp pepper

Instructions
 

Recipe Instructions:

  • Mix all the ingredients in a mixing bowl.
  • Toss everything onto a baking sheet lined with parchment paper.
  • Bake at 355°F or 180°C for 25 minutes.
