In a mixing bowl add the shrimp, olive oil, paprika, garlic powder, and salt. Mix everything well.
Mix the sauce by combining in a small bowl the soy sauce, rice vinegar, sesame oil, hot sauce, erythritol, and sesame seeds. Mix well and set aside.
Rinse the smart noodles well before using them.
Cook the shrimp in a bit of olive oil until golden brown on both sides. Set aside.
In the same pan add the garlic and cook for a couple of minutes.
Add the green onions and spinach.
Cook for a couple of minutes until the spinach has wilted down, and then add the shrimp back to the pan.
Toss in the soy sauce mixture and the smart noodles.
Let everything come together for 2 more minutes.
