Healthy Chili Garlic Shrimp with Low-Carb Noodles

Ingredients:

    For the Shrimp and Noodles:

    • Sliced green onions
    • Minced garlic
    • 2 cups of spinach
    • Smart Konjac noodles
    • Shrimp
    • 1 tbsp olive oil
    • 1 tsp paprika
    • 1 tsp garlic powder
    • 1 tsp salt

    For the Sauce:

    • 2 tbsp soy sauce
    • 1 tbsp rice vinegar
    • 1 tbsp sesame oil
    • Hot sauce
    • 1 tbsp erythritol
    • 1 tbsp sesame seeds

    Instructions
     

    Instructions:

    • In a mixing bowl add the shrimp, olive oil, paprika, garlic powder, and salt. Mix everything well.
    • Mix the sauce by combining in a small bowl the soy sauce, rice vinegar, sesame oil, hot sauce, erythritol, and sesame seeds. Mix well and set aside.
    • Rinse the smart noodles well before using them.
    • Cook the shrimp in a bit of olive oil until golden brown on both sides. Set aside.
    • In the same pan add the garlic and cook for a couple of minutes.
    • Add the green onions and spinach.
    • Cook for a couple of minutes until the spinach has wilted down, and then add the shrimp back to the pan.
    • Toss in the soy sauce mixture and the smart noodles.
    • Let everything come together for 2 more minutes.
