Healthy and Easy Almond Lemon Bars

Ingredients:

  • 4 eggs separated
  • ¼ cup of erythritol
  • Zest and juice of 1 lemon
  • ¾ cup almond flour
  • ½ cup of almonds
  • Powdered erythritol

Instructions
 

Instructions:

  • Combine the egg yolks and the erythritol and whisk this until smooth.
  • Add the lemon zest, juice, and almond flour to the egg yolk mix.
  • In a separate bowl, create stiff peaks of the egg white.
  • Gently fold the egg whites into the flour and egg yolk mixture until well combined.
  • Transfer to a greased cake pan.
  • Spread the almond evenly over the cake batter.
  • Bake for 30 minutes at 350°F/180°C.
  • Let the cake cool for at least 20 minutes.
  • Sprinkle the powdered erythritol over the cake.
