Zest and juice of 1 lemon

almond flour

Powdered erythritol
Instructions
Instructions:
Combine the egg yolks and the erythritol and whisk this until smooth.
Add the lemon zest, juice, and almond flour to the egg yolk mix.
In a separate bowl, create stiff peaks of the egg white.
Gently fold the egg whites into the flour and egg yolk mixture until well combined.
Transfer to a greased cake pan.
Spread the almond evenly over the cake batter.
Bake for 30 minutes at 350°F/180°C.
Let the cake cool for at least 20 minutes.
Sprinkle the powdered erythritol over the cake.
