Preheat the oven to 200°C/400°F.
In a baking dish add the olive oil, feta, cherry tomatoes, salt, and pepper.
Bake for 30 minutes.
Remove from the oven and add crushed garlic. With a fork, smash the tomatoes and feta.
Add 2 cups of fresh spinach to the baking dish and give it a good toss until well combined. Return the dish to the oven to bake for another 10 to 15 minutes.
