Low-Carb Lunch Veggie Omelet

Ingredients
  

Ingredients:

  • ½ chopped onion
  • ½ red bell pepper
  • 1 cup leeks
  • 3 eggs
  • A pinch of sea salt and pepper
  • Grated mozzarella
  • Grated parmesan
  • Fresh salade
  • A couple of slices of cucumber
  • Some olives
  • Feta cheese
  • A couple of slices of avocado
  • 2 slices of low carb bread

Instructions
 

Recipe Instructions:

  • In a large nonstick pan, heat the oil. Add theonions and fry then add the leeks and bell pepper. Stir well, lower the heat,cover, and allow to cook for 5 minutes.
  • In a bowl, mix the eggs, salt, pepper, andgrated mozzarella cheese. Add the grated parmesan and mix well.
  • Pour the egg mixture over the veggies. Coverand cook for about 5 minutes.
  • Meanwhile, grill 2 slices of low-carb bread.
  • Make a small salad by combining the cucumbers,olives, feta, and avocado.
  • Plate the omelet next to the fresh salad andfinish the plate with the grilled bread.
