In a large nonstick pan, heat the oil. Add theonions and fry then add the leeks and bell pepper. Stir well, lower the heat,cover, and allow to cook for 5 minutes.
In a bowl, mix the eggs, salt, pepper, andgrated mozzarella cheese. Add the grated parmesan and mix well.
Pour the egg mixture over the veggies. Coverand cook for about 5 minutes.
Meanwhile, grill 2 slices of low-carb bread.
Make a small salad by combining the cucumbers,olives, feta, and avocado.
Plate the omelet next to the fresh salad andfinish the plate with the grilled bread.
