- 1 sweet paprika diced
- 1 onion diced
- Fresh parsley chopped
- 4 chicken breasts cut horizontally, then vertical
- 1 tsp chicken spices
- 1 tsp sea salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 3 tbsp Greek yogurt
- Shredded mozzarella
- Grated Parmesan cheese
Instructions
Directions:
- Preheat the oven to 400F/200C.
- Cut the chicken breasts horizontally, then vertically this ensures that the chicken cooks equally.
- Place the chicken breast in a large mixing bowl, add all the spices, the olive oil, and the Greek yogurt. Mix to combine, you want all the chicken breast well coated in the marinade.
- Cut 4 pieces of parchment paper, start folding inwards, creating a fan-like shape, then turn the ends to create the boats, you can also use a oven-safe rope.
