Skillets – This  Mexican Chicken Dish recipe is loaded with delicious elements but they all cook at different levels, so you will need a couple medium skillets to prep the vegetables and chicken in.

INGREDIENTS

Olive Oil – To cook the chicken and veggies you will need oil. If you are out of olive oil don’t panic, just swap this oil for your favorite alternative cold-press oil.

Chicken Filets Chicken is an amazing choice when it comes to proteins but it’s often underrated but that is because of people settling for bland chicken and this Mexican Chicken Dish  recipe is anything but bland! These wonderful pieces of chicken will be cooked with a rich blend of herbs, spices, and veggies to make an earthy, spicy, salty, and all-around delicious bite of chicken.

Curry spices commonly include ginger garlic, fennel, mace, cumin, coriander, cardamom, cinnamon, and turmeric, so if you do not have pre-made curry spice just substitute the individual spices.

Mexican Chicken Dish Recipe

    Ingredients:

    • 3 tbsp olive oil
    • 2 chicken filets cut into bite-size pieces
    • 1 onion diced
    • 1 eggplant diced
    • 1 zucchini diced
    • 1 red bell pepper diced
    • 1 can of crushed tomatoes
    • 1 cup grams of sliced mushrooms
    • 1 can of coconut milk
    • 1 tsp curry spices
    • ½ tsp salt and pepper
    • A handful of fresh coriander, finely chopped

    Instructions
     

    • Step One - Heat up a skillet with some olive oil and cook the chicken.
    • Step Two - In a separate skillet, warm oil and sauté the onions until translucent, then add the eggplant, zucchini, and red bell pepper. Cook until the veggies start to become soft. Add in the crushed tomatoes and let it simmer on a medium heat.
    • Step Three - In a separate skillet, heat up olive oil and sauté the mushrooms until they are brown before tossing them in with the other veggies
    • Step Four - Add the coconut milk, curry, salt, pepper, and fresh coriander to the veggies. Stir to combine, cover, and simmer for 5 to 10 minutes.
    • Step Five - Serve over low-carb rice garnished with finely chopped coriander leaves and enjoy!
