    Ingredients:

    • 2 tbsp olive oil
    • 2 chicken filets cut in halves
    • ½ tsp sea salt
    • ½ tsp pepper
    • ½ ground cumin
    • ½ ground coriander
    • Juice of half a lemon
    • 2 zucchinis
    • 1 tbsp pine nuts roasted.

    Instructions
     

    Instructions:

    • Step One – Heat a skillet with olive oil then cook the chicken until it’s golden brown.
    • Step Two – Add more oil, spices, and lemon. Sauté for a couple minutes until completely coated in the lemon mixture. Remove it from heat, cover it, and set it aside.
    • Step Three – Spiralize the zucchini and sauté it in the same skillet on high until it’s soft and slightly golden brown.
    • Step Four – Plate the zoodles, and top them with the pine nuts, and chicken. Garnish with some freshly chopped parsley and enjoy!
