Ingredients
Low-Fat Greek Yogurt – Greek yogurt is a satisfyingly thick and creamy type of yogurt with lots of tangy yogurt flavor. Greek yogurt is made by removing the whey from normal yogurt which is what gives it a nice thick texture. Its balanced flavor makes it perfect for savory sweet dishes alike.
Greek yogurt is a great choice for adding protein without weighing you down. It is low in calories and
rich in many essential nutrients, including calcium, protein, and cobalamin. As an added bonus, Greek yogurt is a probiotic food which makes it great for digestion.
Protein Pudding – Protein pudding is a supplement made to help increase your protein intake. It brings flavor and luscious pudding texture to this recipe.
Protein pudding comes in a wide variety and flavors; some common flavors include chocolate, vanilla, and butterscotch. You can choose your favorite taste to make this pudding your own. I used vanilla for a nice smooth, sweet, and versatile backdrop for all my toppings.
Chia Seeds– Chia seeds are the final ingredient in this creamy pudding. These incredible seeds absorb liquids and become gel-like in texture making them the perfect pudding ingredient. In addition to the amazing culinary applications, chia seeds are great for your health. They are rich in both fiber and protein, along with many other healthy nutrients.
Be sure to save some extra chia seeds for the top of your finished pudding.
Mint Leaves – Fresh mint makes the tangy creamy flavor in this pudding so much more fresh and
light; plus, they look amazing on top of this healthy pudding! Mint is an excellent herb to enjoy in the morning because it brings a little fiber and vitamin C to set your day off right.
Strawberries – There is nothing better than the taste of the perfect fresh strawberry, except maybe pairing it with creamy yogurt-based pudding! Many people know about strawberries’ high vitamin C content but they are also an excellent source of pelargonidin, a plant compound that has been attributed to slowing or stopping cognitive decline.
Make sure to wash your berries well before using them and slice them as evenly as you can so every
bite has a little berry!
Pecans – The crunchy, nutty flavor of pecans is the perfect crescendo to this symphony of sweet flavors. Pecans are a delicious mildly sweet nut. You can use raw or toasted pecans, but be sure to crush them well so that they mix well into this creamy snack.
