Caprese Sweet Paprika Mediterranean Diet Recipe
Ingredients:
- 2 sweet paprikas
- 6 small tomatoes
- 2 mozzarella balls
- A handful of fresh basil leaves
- 1 tbsp olive oil
- 2 tbsp pine nuts
- Pinch of salt and pepper
Instructions
- Step One - Cut the paprika pepper in half, deseed, and wash them.
- Step Two - Cut the tomatoes into thin slices.
- Step Three - Cut the mozzarella into thin slices.
- Step Four - Place the paprika peppers in a baking dish and start filling the peppers with mozzarella, tomatoes, and basil leaves. Repeat this until the peppers are completely full.
- Step Five - Drizzle the olive oil, salt and pepper, and pine nuts over the filled paprikas and bake in a preheated oven until the cheese is golden brown.
