Paprikas – Paprika peppers are long red peppers largely grown in Hungary. They are known for their bright color long shape, large size, and uniquely sweet and spicy flavor. Most paprika peppers are grown to be made into spice but when enjoyed fresh they have a lovely bold and mildly sweet flavor.

These tasty peppers can be just the thing for your health. They have plenty of fiber for digestion but possibly the most noteworthy component in paprika is called capsaicin. This chemical is present in all peppers and it has a powerful anti-inflammatory nature that can help with pain management and swelling.

Tomatoes – Fresh slices of tomato bring juicy freshness to the recipe. They are loaded with sweet and vegetative flavors that please practically everyone’s palate! To make this dish pop choose medium-sized tomatoes like Roma or plum tomatoes for their firm texture and perfect size.

Caprese Sweet Paprika Mediterranean Diet Recipe

    Ingredients:

    • 2 sweet paprikas
    • 6 small tomatoes
    • 2 mozzarella balls
    • A handful of fresh basil leaves
    • 1 tbsp olive oil
    • 2 tbsp pine nuts
    • Pinch of salt and pepper

    Instructions
     

    • Step One - Cut the paprika pepper in half, deseed, and wash them.
    • Step Two - Cut the tomatoes into thin slices.
    • Step Three - Cut the mozzarella into thin slices.
    • Step Four - Place the paprika peppers in a baking dish and start filling the peppers with mozzarella, tomatoes, and basil leaves. Repeat this until the peppers are completely full.
    • Step Five - Drizzle the olive oil, salt and pepper, and pine nuts over the filled paprikas and bake in a preheated oven until the cheese is golden brown.
